SIGNATURE

The Karin Roll

Simmered eel in place of the usual anago, and a thick-cut rolled omelette. These two take centre stage, with finely cut cucumber and simmered kanpyō (dried gourd) worked into a paste to finish.

The omelette is soaked generously in dashi, so it gives way with each bite. A sushi-bar roll with something of a kaiseki soup about it — very much Karin’s own.

Nigiri Without Soy Sauce

Tuna with ponzu,
sea bream with matcha salt

“If there were no soy sauce, how would you eat sushi?” A playful idea the chef has explored on video: ponzu for tuna, matcha salt for sea bream. Each shows a side you would not see with soy.

Sets of three or five pieces can be added to the omakase. Just ask at the counter.

Drinks

A drink born
from sushi rice

Every sushi counter ends the day with leftover rice. Rather than waste it, the chef worked with a sommelier to create the “Shari Drink.”

Our sake list centres on bottles that sit quietly alongside sushi. We are glad to suggest pairings for the day’s dishes.
