The counter is Yakusugi — ancient cedar from Yakushima. Its grain, formed over hundreds of years, is never the same twice.
It feels soft and warm to the touch. The chef says it is the wood that makes the colour of the fish look its best.
Ten Seats
One stage,
in the shape of an L
Just ten seats around an L-shaped counter. From every one, you can see the chef’s hands.
Cutting the fish, taking the rice, shaping the nigiri — you watch it all up close, as if at the theatre. The seats are near enough that guests often fall into conversation with one another.

Light and material
The two characters of 華林 on a lantern sign; lattice and a patterned wall. Even the short corridor to the counter is part of the room.
